Celebrate Everyday with a Festive Feast: Introducing the
Delectable Spice and Herb Butter Stuffed Chicken!

favorite – the Spice and Herb Butter Stuffed Chicken. Crafted with love and
flavor, this delightful dish is perfect for any occasion, making it a go-to
recipe for your daily culinary adventures. Here's a quick run-down of the recipe
–
Ingredients:
• A
whole chicken 700-800 gr
• 1
cup medium grain European Rice
• 1
tbsp ghee or butter
• Diced
onions
• 2
mastic
• 2
bay leaves
• 1
tsp turmeric
• Salt
and pepper
• Baby
potatoes, carrots and red peppers cut
For the spice and herb butter
• 40
gr soft butter
• 2
tbsp garlic
• 1
tsp sumac
• 1
tsp oregano
• 1
tsp paprika
• 1
tbsp salt
• 1/2
tbsp pepper
• 1
tsp dried thyme
Steps :
1- Start with 1 cup of medium grain
European Rice, wash and rinse well, add 1 tablespoon of ghee “clarified butter”
to a pot , then add about 1/4 cup diced white onions, sauté on medium heat and
add in mastic and bay leaves to release
their flavor and fragrance.Lastly add your rinsed Rice, salt, pepper and
turmeric, sauté for 2 minutes then add a 1/4 cup of hot water, cover the rice
and let it simmer and cook halfway through, transfer to a bowl and set aside to
cool before stuffing.
2-Prepare your veggies, baby potatoes,
carrots and peppersand place in your baking tray, season well with salt and
pepper and set aside.
3- Make garlic spice butter by mixing soft
butter, salt, pepper, minced garlic, paprika, sumac and dried herbs, mix and
set aside.
4-Once you are ready to assemble and stuff
your chicken, start seasoning the veggies with 2 tablespoons of the prepared
spice butter.
5- Separate the breast skin and meat
slowly to make sure you stuff in between the skin and breast meat later.
6- Start stuffing the chicken cavity
halfway through and be careful of not over stuffing because rice will expand
while cooking.
7-After stuffing the chicken, tuck in the
chicken legs and tie it together with a string or a foil wrap.
8- Place the Chicken on top of the
seasoned veggies, season well with the rest of the spiced garlic butter and rub
well to cover all of the chicken.
9-To cook, add about 1 cup of water to the
tray to cover halfway through the veggies, cover well with damp baking paper than
foil.
10- Bake at 210 degrees for an hour and
half or depending on the size of your chicken, keep it covered for the first
hour then remove the cover to brown the top and keep brushing with chicken
juices from the tray to keep it moist and glossy.
